Heather's Table; Spinach & Lemon Chicken Soup

A Simple Chicken Soup That is So Fresh, it Won't Disappoint!
And it's SUPER easy to make.

Looking for a fast, healthy chicken soup, that is super yummy, your kids will love it! And if they don't the cats will.

It's so fresh and so simple, you can do it after a soccer game or on a lazy day with the kids. Let them help... my daughter loves to help me in the kitchen. The longest part about making this soup is the store run and chopping the veggies. The chicken is cooked at the store, and all you have to do is pull it apart.

You can take add or adjust anything in the recipe to your liking.... that's the beauty about soup!

Okay, let's get cooking...

You will need:

olive oil
1 small bag of organic baby carrots, chopped
1/2 bunch of organic celery, chopped
1 organic yellow onion, chopped
1 or 2 garlic cloves, chopped
1 small container/bag of fresh organic spinach, whole leaves
​1 organic lemon, for juice and zest
1 bag of frozen organic peas
1 bag of frozen organic corn
1 Lemon Pepper Rotisserie Chicken (made at store)
1 48oz. chicken stock (NON-GMO/ No MSG added)
2-3 tablespoons of chicken base (to taste)
3-4 drops of Lemon essential oil
 a dash of lemon pepper seasoning
water (fill the rest of the pot to the top, or as much as you see fit)

1. In a large sauce pan, add a few tablespoons of olive oil to coat the bottom of the pan. Add chopped carrots (about half of the bag or to your liking), chopped celery ( 6 stalks), and chopped onion. Cook down until semi-soft.
2. Add frozen peas and frozen corn... I use the full bag of each. 
3. Add a few handfuls of fresh spinach. Cover and stir occasionally until spinach is wilted.
4. Pull apart the rotisserie chicken ( I use almost the whole chicken) and add it to the pot. Continue stirring.
5. Add chicken stock and water to fill the pot as much as you can (or want) with the liquid.
6. Add the chicken base, lemon essential oil (be sure it is meant for dietary use - I use YLEO Lemon Vitality Oil), lemon pepper season and/or salt and pepper, to taste.
7. Bring to a boil, and let simmer for 10 min.
