Heather's Table; Spinach & Lemon Chicken Soup

A Simple Chicken Soup That is So Fresh, it Won't Disappoint!
And it's SUPER easy to make.

Looking for a fast, healthy chicken soup, that is super yummy, your kids will love it! And if they don't the cats will.

It's so fresh and so simple, you can do it after a soccer game or on a lazy day with the kids. Let them help... my daughter loves to help me in the kitchen. The longest part about making this soup is the store run and chopping the veggies. The chicken is cooked at the store, and all you have to do is pull it apart.

You can take add or adjust anything in the recipe to your liking.... that's the beauty about soup!

Okay, let's get cooking...

You will need:

olive oil
1 small bag of organic baby carrots, chopped
1/2 bunch of organic celery, chopped
1 organic yellow onion, chopped
1 or 2 garlic cloves, chopped
1 small container/bag of fresh organic spinach, whole leaves
​1 organic lemon, for juice and zest
1 bag of frozen organic peas
1 bag of frozen organic corn
1 Lemon Pepper Rotisserie Chicken (made at store)
1 48oz. chicken stock (NON-GMO/ No MSG added)
2-3 tablespoons of chicken base (to taste)
3-4 drops of Lemon essential oil
 a dash of lemon pepper seasoning
water (fill the rest of the pot to the top, or as much as you see fit)

1. In a large sauce pan, add a few tablespoons of olive oil to coat the bottom of the pan. Add chopped carrots (about half of the bag or to your liking), chopped celery ( 6 stalks), and chopped onion. Cook down until semi-soft.
2. Add frozen peas and frozen corn... I use the full bag of each. 
3. Add a few handfuls of fresh spinach. Cover and stir occasionally until spinach is wilted.
4. Pull apart the rotisserie chicken ( I use almost the whole chicken) and add it to the pot. Continue stirring.
5. Add chicken stock and water to fill the pot as much as you can (or want) with the liquid.
6. Add the chicken base, lemon essential oil (be sure it is meant for dietary use - I use YLEO Lemon Vitality Oil), lemon pepper season and/or salt and pepper, to taste.
7. Bring to a boil, and let simmer for 10 min.

I AM a mentor, an educator, offering my best efforts towards guiding others to living a "whole" lifestyle through holistic tools and knowledge, and through inner creativity.

I AM blunt, unfiltered, tell you like it is, kind of gal, because I believe that the truth always out weighs sugar coating or lies. Truth IS radical responsibility, awakening, and gives courage towards change. Truth never fails.

I AM an intuitive, with almost all of the "clairs"... and a full believer that EVERYONE has special gifts to share with the world, even if they don't know it yet.

I AM a mom, a self-doubting, "am I doing this whole parenting thing right", loving, supporting, and maybe a little too much protecting, kind of mom.

Rev. as in Revelator (not Reverend)

As in not affiliated with any one specific religion, but being compassionate towards all religions. Sharing love, kindness and hope to all who are in need. Sharing holistic knowledge and spiritual abundance, like Universal Laws, divine coaching, meditation and manifesting.

As in Spiritual AF.

Are you ready to be unapologetically you?

Because being the real you, sets the stage for all real relationships you encounter in your life... I don't mean just romantic relationships, but also professional, loyal friendships and even general communication between strangers (who may become a great friend).

Because being the real you means freedom of letting go of your fears and doubts that hold you back from whatever it is you are looking for in life.

Simple Meditation; Inner Calm

Simple, relaxing meditation for occasional stress relief and inner calm. This is something that you can read, and remember easily to be able to just bring yourself to this state of being.

Find a comfortable seat, close your eyes and take a nice deep breaths in through your nose and out through your mouth.

Focus on the oxygen traveling throughout your body as you breathe deeply in time. In and out. In and out.

Imagine each muscle relaxing starting at the top of your head traveling down through your back and shoulders. As you exhale the muscles in your body melt and become fully relaxed.

With each breath, soothe every joint, muscle, and bone as you allow yourself to sink further into your seat.

You can feel the energy traveling all the way down your legs in through the bottoms of your feet, as every muscle relaxes.

As you sit, think of nothing but an ocean scenery, of sand, blue water, warm breeze and the sunshine.

Take a moment to let this setting soak in.

Imagine with each breath that you take the waves the ocean come in and out as you inhale and exhale.

Allow your mind to ride the waves. Placing your hands on your belly you can feel the "up and down" of each wave.

With the intention that the water is washing away all of your stress, and your worries, allowing all of the uncertainties to flow into the ocean, far away, putting your mind, Heart, and Soul at peace.

As you sit comfortably, notice the negative energy washing away, being replaced with nothing but love and light.

Let all of this positive energy rush throughout your entire body starting at the bottoms of your feet heading towards your hips, into your chest, and through the top of your head.

Feel the floor beneath your feet. Notice the noises within the room. The smells around you as you become more aware. Taking last few deep breaths for complete cleansing.

When you are ready, you may open eyes.
